Grape Variety: It is one single grape variety of Chardonnay growing on a pebbly vineyard. The superficial soil and the very generous sun intertwine to produce a second to none grape quality.
Vinification: A slight soaking for a certain number of hours followed by a light pressing precede fermentation, which takes place at 16 degrees Celsius. The milky substance obtained smoothens the palate.

Aging: The vintage is raised upon the lees from three to four months with a regular suspension.

Preservation: The bottling process takes place in March; the Chardonnay is launched on the market in the summer following the harvest.
Tasting: Characterized by a flowery nose; fruits mingle with honey. Its golden color is very attractive. As for the palate, it is endowed with smoothness and richness.

Vinification:
After the grapes are stripped from their stems and crushed, the fermentation takes place in an ambient temperature of 30 degrees Celsius .The malolactic fermentation ennobles the wine after the pneumatic press.

Characterized by its fruitiness and balanced tannins, this wine has to be consumed within the three years that follow the harvest.
Aging:
After the racking and sulfuring, this wine rests in concrete vats. Bottled before the summer, the development of the bouquet continues in bottles for three month in underground cellars.

Vinification:
After the grapes are stripped from their stems and crushed, this wine macerate for a short time under low temperature ( 16 C to 18 C). The malolactic fermentation is not requested.

Aging:
The Rosé is bottled in the spring after harvest. A severe winter refines the taste and ennobles the wine.

This product is the result of a combination of three different grape varieties: Cinsault gives the smoothness, Grenache gives the fruity flavor and Carignan gives spicy and fresh taste.
Vinification:
A short period of " skin contact" is practiced, leaving the juice and crushed grapes in a stainless steel fermentation vats, at regulated temperature to allow flavor pick - up from the skins and to avoid oxidation.The malo is not requested.
Tasting:
This wine blends aromas of the vines with those of the aging process Fresh and lively with a golden yellow color, this white wine reflects the Generosity of an exceptional soil.
Preservation:
It is to be consumed within three years that follow the harvest.

The sea's most faithful companion, this golden white accompanies Perfectly well seafood, fish as well as shellfish.
Aging:
This white wine improves naturally in the vats for the winter that follows the harvest.Before the weather warms up, the wine is filtered, racked and sulfured.
Grape Variety:
Clairette, Grenache Blanc and Ugni Blanc give to this wine a fruity & floral character. Its freshness is given by the acidity of the Ugni Blanc.
1. Grape Variety: The Grenache is traditionally used for the production of natural sweet wines. We choose the parts that are best sun-exposed to produce our special vintage " Délices des Moines ".
2. Vinification: The entire crop undergoes treading and stripping. At a very precise time, fermentation will be stopped by alcohol, a wine brandy with a 70% vol. of alcohol prepared with all the care and the know-how of our cellar. Maceration is extended for a few days after fermentation is stopped.
3. Aging: The wine matures for a year in oak casks and acquires the necessary aroma for its ennoblement.

4. Preservation: This is a wine that can be kept for a very long time. It will be appreciated throughout twenty years and even more.
5. Tasting: Cocoa and coffee roasting complete the aroma of fruits soaked in alcohol and give birth to a rich subtle bouquet. This wine, endowed with exceptional length is rich and sweet in the mouth without it being sickening.
6. Harmony: It is the ideal companion of chocolates and desserts. To be kept for big occasions and feast days.
1. Grape Variety: Exclusively made of Muscat of Hambourg. The crop can only be harvested beyond a 14%vol of alcohol.
2. Vinification: Treading and stripping are a must. Fermentation will be stopped by alcohol. The alcohol being wine brandy prepared with great care in our castle (in our cellars).
3. Aging: After the habitual treatment of fining and stabilization, the Miel du Clos will be filtered and bottled. It will be launched on the market in the spring that follows the harvest.
4. Preservation: This is certainly not a wine that lasts for a long time. The Miel du Clos is to be consumed within the two years following the harvest.
5. Tasting: Touches of rose petals and incense start to be perceptible as from the very first year. Later, the nose will develop into exotic fruit and will mainly tend towards lychee aroma.
6. Matching food: The Miel du Clos accompanies perfectly well chocolate and crystallized fruits. Excellent also when served as aperitif. To be served chilled. Serving temperature: 8 to 10 C.

1- Grape Variety: Exclusively made of Cinsault and Grenache, these grape varieties growing on the pebbly vineyards are showered with Lebanon's generous sun.
2- Vinification: After the treading and stripping procedures, the Cinsault and Grenache undergo a relatively long soaking process to enhance their finest tannins. This delicate product matures more with fermentation.
3- Aging: With the end of the winter, "Tradition" goes through tartaric stabilization; it is bottled and preserved four to five months before being launched on the market.
4- Tasting: The nice red color is outstandingly limpid and shiny. The nose is subtle with a raspberry dominance; the bouquet is endowed with length and the fine tannins with roundness.
5- Preservation: This new wine is served chilled.
6- Matching food: Your meal's most faithful friend; this wine will render your salad, meat, pasta and vegetables exquisite.
